Egg Benedict with hollandaise sauce

Another weekend brekky or brunch.. Egg Benedict with hollandaise sauce.. I love my egg Benedict swimming in the sauce!.. never had enough sauce when eating out.. Sometime I use smoked salmon instead of bacon depending on whatever I have in the fridge..

Ingredients

2 eggs
4 slices of shortcut bacon
1 English muffin (sliced in half)

Hollandaise sauce
2 egg yokes
1/2 tsp lemon juice
1/2 tsp white wine vinegar
100g butter
Salt
Pepper

Method

Beat the egg yokes in the blender until lighter colour
In a saucepan, heat the lemon juice & white wine vinegar until bubblely
Slowly add the warm juice in the egg while the blender is on
In the saucepan, melt the butter
Slowly add the warm melted butter into the blender while it's on
Keep the blender going until the sauce is blended well, fluffy with lighter buttery colour.

Grill the bacon until crispy
Toast the muffins
Poach the eggs in the pan.

Layer crispy bacon, poached eggs on the toasted muffins
Pour the sauce on the top
Serve warm

Note: can also use smoked salmon or/and spinach for topping.

Thai Banana Roti

If you visited Thailand and never tasted this famous street food snack, you've never been to Thailand!..Thai Banana Roti... sadly I can't buy it here, the only way I can taste it is to make one from scratch!.. Oh well, whatever it takes to have this beautiful yummy dessert, I will do it!.. Also it goes well with strawberries too.. made this one for my lovely friends at Burnett heads the other week with strawberries .. Yummo!

Ingredients; (make small 6 roties)

1. Plain flour x 2 cups
2. Salt x  1/4 tsp
3. White sugar x 1/2 tbs with a little extra for topping.
4. Egg, beaten x 1 egg
5. Full cream milk x 1 tbs
6. Icy cold water x 1/4 cup
7. Peanut or veggies oil x 1/2 cup
8. Butter x 3 tbs
9. Banana, Sliced x 2 large banana
10. Sweeten condensed milk x 1 small can .. just for topping
11. Shredded coconut x 3 tbs

Methods ;

1.Sift the flour into a mixing bowl, Sprinkle in the salt and sugar and mix thoroughly. In the center add the egg and milk.
2. Fold them into the flour,  Add water slowly while working the flour with your hands to form a sticky dough.
3. Knead for 5 -7 minutes until the dough is soft and elastic.
4. Cover with a damp cloth and set aside for at least 30 minutes or longer.. I prefer 1 hour.
5. On a smooth, non-stick working surface ( stainless steel prefered) form the dough into a long log, then twist and break the dough off into small chunks, each about the size of ping pong balls  (shoudl be 6 balls).
6. Knead each ball a few times and roll into a round ball. Set aside.
7. Dip a few of your fingertips in oil and thoroughly oil the surface of each ball. Place the greased balls back in the bowl, you can stack them up, and cover with plastic wrap. Set for at least another 30 minutes or longer..
8. Lightly grease the smooth working surface with a little oil. Place a dough ball on the greased working surface and press with the palm of your hand into a flat round (like pancakes).
9. This one is a little tricky!!. Dip a few of your fingertips in a little oil and grease both sides of the round. Then pick up the dough round on the edge closest to you, such that your left hand is holding it with the thumb beneath the dough while the other fingers are on top, and your right hand is holding it with the thumb on top and the side of the index finger beneath. Flip the dough in a forward, circular, clockwise motion, slapping the far end onto the working surface and stretching the dough. Continue to flip with the same motion and finger positions several times, stretching the dough with each flip until it becomes almost see-through thin. ( I can't take picture because I have to use two hands and my hands were oily.)
10. After the dough is stretched as thinly as possible, lift it up at one point like a piece of cloth. Using a circular motion, spin the piece loosely into a seashell-like round and set aside on a greased surface. Do likewise with all the pieces of dough.
11.Heat a large flat frying pan over high heat until it begins to smoke. Add oil in the pan (should cover surface) and 1/2 tbs of butter.
12.Take a dough seashell and press it with the palm of your hand into a flat round 4 -5 inches across. Gently lift it from the working surface and drop it into the pan (make sure the oil not too hot that it browns too quickly). Brush a light coating of butter on the top side. Fry over low to medium heat until the bottom side is golden brown and crispy.
13 then turn over and fry the second side, brushing a little butter on top.

14. Place few pieces of sliced banana and shreded coconut in the middle.
15.Flod the bread over the banana and coconut.. you can fold them into a square or roll it into a roll shape like kebab (I did square one).
16. Place the roti on the plate, dizzle with sweeten condensed milk and sprinkle with a bit of sugar..cut it into bite size and eat! Yummo!.

Lemon Meringue cupcakes

Cupcakes were the "in" thing at the time plus master chef program on TV .. A friend of mine, Karen was inspired me about this one.. They tasted so yummy with homemade lemon curd and crispy meringue on the top.. The texture and taste are perfectly blended in well together.. didn't last long tho .. all were gone in a heart beat!

Ingredients (12 cupcakes)

Cupcakes
1 cup pure cream
1 cup caster sugar
2 eggs, lightly beaten
1 1/2 cups self raising flour
Finely grated rind of 1 lemon

Lemon curd
1/2 cup lemon juice
100g butter
1/2 cup caster sugar
1 egg
3 egg yolks

Meringue
3 egg whites
1/2 cup caster sugar
Method:
1. Preheat oven to 180'C. Place 12 patty cake liners in a 12 hole 1/2-cup capacity muffin pan.

2. Place cream, sugar and eggs in a large mixing bowl and whisk until smooth. Gradually add flour and zest and continue whisking until mixture is thick and smooth.

3. Divide mixture between prepared liners and bake for 15-20 minutes or until cakes spring back to touch. Cool in muffin pan.

4. For lemon curd,  heat lemon juice and butter in a small saucepan and simmer until butter has melted. Add sugar, egg and yolks and cook, whisking continuously until mixture becomes thick and glossy. Pour into a shallow oven tray to cool.

5. For meringue, beat egg whites in an electric mixer until firm peaks form, gradually add sugar, a tablespoon at a time, beating until sugar has dissolved between each addition. Spoon meringue mixture into a piping bag.

6. To serve, preheat grill to medium-high. Cut a small hole in the top of each cupcake (don't throw them away, just pop them in your mouth immediately!) and fill with 1-2 teaspoons of lemon curd.  Pipe a swirl of meringue mixture on the top of each cupcake and place under heated grill for 60-90 seconds or until golden. Arrange on a serving plate with spoonfuls of lemon curd if desired.
