Potato scones with smoked salmon, sour cream and sweet chilli sauce


I don't normally have brekky on Sunday.. Just brunch.. whatever left over in the fridge will do me.. With a bit of leftover mashed potato, I made this .. Potato scones with smoked salmon, sour cream and sweet chilli... was yummy leftover makeover! :) 

Ingredients 

1 cup of leftover mashed potato
1/3of plain flour plus little extra flour 
2-3 tbs of grated carrot
2-3 tsp of finely chopped spring onions
A knob of butter
2-3 tsp of grated cheese
Salt
Pepper
Olive oil spray
Smoke salmon
Sour cream
Sweet chilli sauce

Method

Gently mix mashed potato with flour by hand until combined 
Add corrot, spring onion, butter, cheese, salt & pepper, gently mix them & make 2 small balls.
Roll the ball mixtures in a bit of flour, then flatten them into flat round scones.

In the medium heat frying pan, spray olive oil 
Grill the scones until cooked & brown on both sides (take about 4-5 mins each side)

Put on the plate, topped with salmon, sour cream
Serve warm with sweet chilli sauce
