Thai Banana Roti


If you visited Thailand and never tasted this famous street food snack, you've never been to Thailand!..Thai Banana Roti... sadly I can't buy it here, the only way I can taste it is to make one from scratch!.. Oh well, whatever it takes to have this beautiful yummy dessert, I will do it!.. Also it goes well with strawberries too.. made this one for my lovely friends at Burnett heads the other week with strawberries .. Yummo!

Ingredients; (make small 6 roties)

1. Plain flour x 2 cups
2. Salt x  1/4 tsp
3. White sugar x 1/2 tbs with a little extra for topping.
4. Egg, beaten x 1 egg
5. Full cream milk x 1 tbs
6. Icy cold water x 1/4 cup
7. Peanut or veggies oil x 1/2 cup
8. Butter x 3 tbs
9. Banana, Sliced x 2 large banana
10. Sweeten condensed milk x 1 small can .. just for topping
11. Shredded coconut x 3 tbs

Methods ;

1.Sift the flour into a mixing bowl, Sprinkle in the salt and sugar and mix thoroughly. In the center add the egg and milk.
2. Fold them into the flour,  Add water slowly while working the flour with your hands to form a sticky dough.
3. Knead for 5 -7 minutes until the dough is soft and elastic.
4. Cover with a damp cloth and set aside for at least 30 minutes or longer.. I prefer 1 hour.
5. On a smooth, non-stick working surface ( stainless steel prefered) form the dough into a long log, then twist and break the dough off into small chunks, each about the size of ping pong balls  (shoudl be 6 balls).
6. Knead each ball a few times and roll into a round ball. Set aside.
7. Dip a few of your fingertips in oil and thoroughly oil the surface of each ball. Place the greased balls back in the bowl, you can stack them up, and cover with plastic wrap. Set for at least another 30 minutes or longer..
8. Lightly grease the smooth working surface with a little oil. Place a dough ball on the greased working surface and press with the palm of your hand into a flat round (like pancakes).
9. This one is a little tricky!!. Dip a few of your fingertips in a little oil and grease both sides of the round. Then pick up the dough round on the edge closest to you, such that your left hand is holding it with the thumb beneath the dough while the other fingers are on top, and your right hand is holding it with the thumb on top and the side of the index finger beneath. Flip the dough in a forward, circular, clockwise motion, slapping the far end onto the working surface and stretching the dough. Continue to flip with the same motion and finger positions several times, stretching the dough with each flip until it becomes almost see-through thin. ( I can't take picture because I have to use two hands and my hands were oily.)
10. After the dough is stretched as thinly as possible, lift it up at one point like a piece of cloth. Using a circular motion, spin the piece loosely into a seashell-like round and set aside on a greased surface. Do likewise with all the pieces of dough.
11.Heat a large flat frying pan over high heat until it begins to smoke. Add oil in the pan (should cover surface) and 1/2 tbs of butter.
12.Take a dough seashell and press it with the palm of your hand into a flat round 4 -5 inches across. Gently lift it from the working surface and drop it into the pan (make sure the oil not too hot that it browns too quickly). Brush a light coating of butter on the top side. Fry over low to medium heat until the bottom side is golden brown and crispy.
13 then turn over and fry the second side, brushing a little butter on top.

14. Place few pieces of sliced banana and shreded coconut in the middle.
15.Flod the bread over the banana and coconut.. you can fold them into a square or roll it into a roll shape like kebab (I did square one).
16. Place the roti on the plate, dizzle with sweeten condensed milk and sprinkle with a bit of sugar..cut it into bite size and eat! Yummo!.
